CHICKEN KORMA RECIPE
What is Chicken Korma?
Korma is a favorite South Asian dish with Moghlai origin. The word 'korma' (or qorma) means 'to breeze', or to share. In the Pakistani and North Indian method of preparation, the chicken is roasted in ghee / oil and whole spices before a mixture of curd and fried onion is mixed to make a thick curry.
Ingredients of chicken korma
- 1/2 kg chicken
- 1 cup oil
- 2-3 tbsp ghee
- 8-10 cardamom
- 6-7 cloves
- 2 tbsp garlic
- 1 tbsp coriander powder
- 1 tbsp salt
- 1 tbsp ginger paste
- 1 cup Yogurt
- 2 onions (fried, 1 tablespoon coriander)
- 1 tablespoon coriander Grind saffron (mixed with 3 tablespoons of water) to garnish coriander leaves, chopped
How to make Chicken Korma
1. Heat the vegetable oil in a pan, then add a doll of ghee.
2. Add cardamom, cloves, garlic and fry the mixture well.
3. Then add chicken and cook for about 2-3 minutes.
4. Keep shaking.
5. Once browned, add coriander and chilli powder. 6. Add salt to taste.
7. Add ginger paste, fried onion and yogurt mixture, cook for one minute.
8. Then add to taste. Add hot spices and saffron. .
9. If the gravy is too thick, add a little water before covering it. The spice should mix well with the chicken.
10 Cover and allow to simmer over low heat. Let it cook for about 10 to 15 minutes.
11. Keep shaking occasionally.
12 Serve hot, garnished with coriander leaves.
