How to make crispy samosas
SAMOSA RECIPE
samosas are a popular breakfast in pakistan, and elsewhere. Delicious fried parcels are often sold on the streets, but the best parcels are made at home. If you want, you can make pre-flavoured potatoes. Extremely seasonal potatoes can be served on their own as a side dish
INGREDIENTS:
FOR THE DOUGH
2 cup all purpose flour
Half of teaspoon of salt
1 teaspoon celery or cumin
3 cup vegitable oil
3 cups of cold water
FOR FILLING
1 pound reset potatos, peeled, into 1 inch cubes
2 midium carrot, chopped, optional.
3 tablespoon vegitable oil,plus about 3 cups for further frying.
1 chopped onion, about 1 cup salt and pepper
1 teaspoon cumin
1 teaspoon black mustard seeds.
1 teaspoon chopped garlic
1 teaspoon chopped ginger
2 serrano chillis, finely chopped.
1 teaspoon turmeric
Half of teaspoon of hot spices
3 tablespoon lemon juice
1 cup chopped red pepper, tender steam and leave.
How to make
Step1: Make a dough:in a midium bowl,add the flour, salt and celery seeds. Drizzle in the oil and work with the fingure until the mixture is smooth. Slowly add water,Stirlling until the soft dough formed. If the dough look too dry, add a tablespoon of water;if it look wet, add a tablespoon of flour. Knead for 1 minute and make a ball . Wrap and set aside for 30 minutes.
Step3: put one tablespoon of oil in a very small pan over medium heat. When hot,add cumin seeds.When the seeds are fragrant and start sprouting, add garlic, ginger,chilli,turmeric and hot spices and stir. let it cook for a minute,then add the contents of the pan to the onion.
Step4: Add the mashed potatoes and carrots and stir well to coat.Check the spice and adjust the salt. Pour the mixture into a bowl and allow to cool to room temprature. when cool, add lemon juice and chopped red pepper. In this process, break the potatoes a little and mix well.
Step5: Make samosas. Divide the flour into 20 pieces, each weighting 1 1/2 ounces. shape each piece into a ball and place on a large plate. Cover with a damp cloth.
Step6: Roll each dough ball into a thin disc about 6 inches in diameter, as if the pie were taking out the dough. Cut each disc in half, leaving 2 pieces with a straight side and a round side.
Step7: make a cone by floding each half of the disc and pressing the right sides together. Open 3 tablespoons of filling on the round side, then close it with a click and make a full triangle. Make the remaining flour balls into samosas.
Step8: Heat about 2 inches of oil at the bottom of the work over medium-high heat. Adjust the heat to keep the oil at 350 degrees.Put 4 samosas in hot oil at a timeand fry on one side till golden, then turn and cook on the other side. Remove from oil and place on paper towels.
Serve the samosas hot or at room temprature, with your favourite sauce.
